Ceci n’est pas un bistro.

Wils Bakery Cafe

A good idea often lies right in front of you; you must just see it. Wils Bakery Café is the living proof of this saying. What started as a French bakery for the neighborhood during the lockdown turned out to be the perfect foundation for a bistro. Its popularity is endorsed by the Bib Gourmand from Michelin and the 13 Gault & Millau points. This makes Wils Bakery Café rightly the Burgundian sister of the fine-dining restaurant Wils*.

Gastronomy and good vibes

Joris Bijdendijk was at the inception of the idea to make Wils Bakery Café the place where the craft of a bakery and the coziness of a French bistro come together. The menu is accessible and is characterized by classic appetizers and dishes such as snails in herb butter, oeufs mayonnaise, or profiteroles with lime quark, lemon compote, and coconut ganache. Wils Bakery Café is also still a French bakery. “Not the place for your cream puffs and white rolls. But for large sourdough breads, crispy baguettes, and dazzling pastries from our pastry chef Laura Basten.” Joris' famous Beurre de Baratte with fleur de sel from Normandy is always available for all butter lovers, highly recommended!

Michelin Bib Gourmand

Never before has a bakery been rewarded a Bib Gourmand, Michelin’s rating for restaurants with an exceptionally good price-quality ratio. According to Joris, Wils Bakery Café received the Bib Gourmand partly because of the unique combination of bistro and bakery. “This did not exist in that way in the Netherlands yet. Having a Bib Gourmand says a lot about the quality of a restaurant. A Bib Gourmand is truly a dream. In an are or city unknow to me, I often check if there's a restaurant with a Bib Gourmand. Then you can be sure you are getting value for money.”

Family

The recognition from Gault & Millau and Michelin is the crowning achievement of the hard work of a dedicated, solid team. A family, as Joris likes to describe his teams. Joris runs the kitchen together with Rudolf Bos, who, in his mid-twenties, already held the title of SVH Master Chef and was awarded a Michelin star. Rudolf says: “At Wils Bakery Café, I am back to the basics, because we make everything ourselves using traditional methods. I can even use my patisserie skills here.” While Rudolf and Joris lead behind the counter, Sander van Loenen and Barbora Peterikova take charge on the other side. Joris remarks: “Sander is the finest host in Amsterdam, and sommelier Barbora loves to serve wines that pair well with chef Rudolf’s dishes.” According to Joris, good wine is obviously not to be missed in a French bistro, just like the feeling of family. “Make yourself at home, our door is always open!”

Wils Bakery Café is located at Stadionplein 24 in Amsterdam on the ground floor of Move Amsterdam. For lunch, Wils Bakery Café is open from Tuesday to Saturday from 12:00 PM, and for dinner from Wednesday to Saturday from 5:30 PM.
