Fresh & sweet

Anyone who hears the word ‘sugar’ is bound to immediately think ‘unhealthy’. Yet sugar is an essential source of energy. Sugar is a collective name for a sweet substance that occurs naturally in many products. The best energy comes from the sugars that are naturally present in foods like fruit, vegetables and unsweetened dairy products like milk and yoghurt. We’re expanding our sweet selection at each Vermaat location by focusing on these naturally ‘fresh’ sugars. You can read more below.

It’s not easy to get a peek into our kitchen, but we’re always happy to share tips with fellow sweet tooths, so you can get started on creating your own delicious yet responsible sweet treats, just like our chefs!

  • Looking for sugar replacements? Make use of the natural sweetness of fruit, such as dates or bananas. Cinnamon has a sweet flavour too, and is also a natural preservative.
  • Sweet vegetables such as carrot, beetroot, pumpkin or sweet potato are a great foundation ingredient for cakes, pies and muffins.
  • If you want to sweeten a dressing without using sugar, honey or ginger syrup, try fresh ginger, apple or shallot instead.
  • If you want to make something taste sweeter, add fresh mint – it enhances sweet flavours. Roasting fresh vegetables intensifies their sweetness too.

Just try these Black Bean Brownies with – you guessed it – black beans. Beans are not only incredibly healthy, they’re also a great alternative to flour. And the flavour is simply sensational!

Black Bean Brownies

Method:

  1. Preheat the oven to 175°C.
  2. Drain the black beans and blend them in a food processor as finely as possible.
  3. Add the cocoa, honey, eggs and vanilla, and blend until smooth.
  4. Add the walnuts and blend briefly so that there are still large pieces in the batter.
  5. Line a baking tray with greaseproof paper and pour in the batter.
  6. Bake for around 25 minutes until the top of the brownie feels nice and firm to the touch.

Serves 10

  • 800g black beans
  • 8 tbsp cocoa
  • 10 tbsp honey
  • 6 eggs
  • 1 vanilla pod
  • 150g walnuts
